2008 Symbol - Water Tank Removal

Just like many other owners the water level monitoring system on our van fitted with the MES Type 1 push-button LCD control panel is unreliable - Fresh water shows 25% when empty and 25% to 50% when full, plus the Low Water Alarm does not always operate. Also, the Waste Tank Full does not operate. I have flushed both tanks with Elsan Tank Clean but achioeved only marginal improvement.
Not really a problem whilst we are using the van as it is relatively easy to judge water consumption to keep things topped up and stop the water heater tripping out due running dry.
However, we are considering selling the van later this year so having the system operating correctly would be helpful. To that end I am considering dropping both the Fresh and Waste tanks to give them a proper service, including the sensors which are no longer available, and check for damaged connections etc.
Happy about releasing the hook bolts securing the tanks to the chassis but have a couple of concerns set out below and wondered if any other owners had carried out this procedure and could advise:
Fresh Water: Not sure how the main filler pipe is connected into the tank or how much "slack" ther is and whether it can be released from the filling point rather than at the tank end once some access is achieved.
Waste Water: Not sure of how the various drains are connected into the tank or how they can be released without damaging any of the pipework.
Any comments or suggestions gratefully received.
