Not wanting to ask about sensors - had this issue on our previous Swift and seen the threads discussing the sensors/cleaning/replacing etc. My question is around the tank fill via the control panel. 

We use an aquaroll and I bought a whale adapter pump (the square one) which connects to the outside socket. As per the manual “this setting will be active by default. Pressing this will start or stop the automatic filling of the fresh water tank. The filling process will automatically stop when the tank when the tank sensors detect it is full or after 7 minutes of filling whichever occurs sooner. This button will lit blue while filling”

… so if the useless sensors stop working, is there anyway to override the cut off? Don't care about the water levels, I know by now when I need to fill it and empty it. On our Swift it was fine when those sensors failed because it just used a 2 pin 12v pump and did not tie to the water level sensor (e.g. know its full when it starts to overflow…. )

Surely an massive oversight with the whale option if you cannot bypass the cut off?

If not possible to override on the panel - would removing the sensors /blanking them off work to force the sensor in the panel to 0% permanently?

For context, the van is a 22, its been fine but this weekend away both have failed. It could be the cold weather but even if it is, I know they’ll fail eventually.

I normally fill my freshwater tank with the external pump and water roll and when the tank sensor shows 100% the pump stops.  I made the mistake early on of not then disconnecting the pump or turning the autofill off.  What then happens is the pump starts up again as soon as water is drawn from the freshwater tank and before you know it the pump is pumping air and at risk of burning out.  For various reasons, one being to help the pump, I disconnected and removed the solenoid operated water valve below the Whale filler socket.  I then discovered that after the freshwater tank sensor shows 100% and the pump stops, water syphons back into the barrel.  So another reason to disconnect the pump as soon as the tank is full.  As for the freshwater tank sensors giving a false reading, it only happens rarely on my van and soon corrects itself.  When it happens its usually at the bottom end e.g. showing 25% full when its empty.  To my knowledge, its never shown 100% full when it's empty.  

To answer your question, if you disconnect the 100% sensor spade connector from the harness and then seal the end on the harness so there is no chance of it getting damp and shorting out, the CP should never show 100% full and therefore the autofill when turned on should keep powering the external water pump until you disconnect the pump or turn the autofill off.  This will allow you to get slightly more water into your freshwater tank by filling it until it overflows through the breather but you will have to stay with the pump to disconnect it.  If connected to a mains water supply it will also stop power being cut to the solenoid operated water valve when the tank is full and so stopping the mains water supply to the freshwater tank when it's full.

If you are having a problem with the pump stopping prematurely because the sensor is showing the freshwater tank is 100% full when it isn't, I would double down on cleaning/descaling the whole of the inside of the freshwater tank and ensuring the wires to the sensors on the outside of the tank and their harness connectors are clean, dry and sealed against moisture.  I find false sensor readings to be much more prevalent on the wastewater tank and that I am sure is due to its lack of internal cleanliness.
